SHORTCUT MEAL USING A HARDING’S ROTISSERIE CHICKEN

Everyone enjoys sharing home-cooked meals, but sometimes we need an easy weeknight dinner.

Enter the Harding’s Rotisserie Chicken!  An already cooked Harding’s chicken makes mealtime fast and easy!

TOMATO CHICKEN SALAD

1 Lemon

2 lb Roughly Chopped Tomatoes

3 Cups Rotisserie Chicken

1 Large Sliced Cucumber

1/2 Cup Chopped Flat-Leaf Parsley

1/4 Cup Sliced Green Onions

1/4 Cup Lightly Packed Fresh Basil

2 Tbsp Olive Oil

1/2 Tsp Salt

1/2 Tsp Pepper

1/2 Cup Crumbled Feta

Ciabatta or French Bread

Step 1)  Grate zest from lemon to equal 2 tsp; squeeze juice from lemon to equal 2 Tbsp.

Step 2)  Combine lemon zest, lemon juice and the next nine ingredients in a large bowl.  Let stand 10 minutes.

Step 3)  Toss all ingredients with Feta just before serving.

ADD:  Fresh Ciabatta or French Bread from Harding’s Bakery 

Step 1)  Brush both sides of bread slices with Olive Oil

Step 2) Grill or fry 1-2 minutes each side

Makes: 4 servings        Hands on Time:    10 Minutes     Total Time:   20 Minutes
