Chocolate Pots de Crème

Prep Time: 5 Min. Cook Time: 5 Min. Chill Time: 1 Hr. What you need:

+ 12 oz. pkg. chocolate chips
+ 2 c. lowfat milk + 1/4 c. sugar + 1/8 tsp. salt + 4 egg yolks, beaten + 1 tsp. vanilla What to do:
1. In a microwave safe bowl, combine chocolate chips and milk; Melt on High for 3 min. Using a wire whisk, beat until all of chocolate is mixed. Mix in salt and sugar. Slowly, stir in beaten egg yolks. Cook, in microwave on High for 1 min., stir; cook an additional minute. Stir making sure mixture is thick. Blend in vanilla. Pour into 4-6 custard cups or serving dishes; chill. Serve with sweetened whipped cream, fresh fruit and mint for garnish.
* To store whites: Pour into freezer containers, seal tightly, label with number of whites, date and freeze. For faster thawing and easier measuring, first freeze each white in a standard ice cube tray.
