Crunchy Apple Salsa with Grilled Chicken

Prep Time: 10 Min. Cook Time: 15 Min. Marinate: 20 Min. What you need:

+ 2 c. salad apples, halved, cored and chopped
+ 3/4 c. (1 large) chile pepper, seeded and chopped + 1/2 c. chopped onion + 1/4 c. lime juice + salt and pepper to taste + 1/4 c. dry white wine + 1/4 c. apple juice + 1/2 tsp. grated lime peel + 1/2 tsp. salt + dash pepper + 4 medium boneless, skinless chicken breasts What to do:
1. Combine apples, pepper, onion & lime juice; mix well. Add salt & pepper to taste. Set aside.
2. Combine all other ingredients and pour over chicken breasts. Marinate for 20 to 30 mins. Drain and grill chicken over medium-hot coals, turning once, until chicken tests done. 3. Top grilled chicken with apple salsa. Wine pairings:
Pinot Grigio, Sauvignon Blanc, Chardonnay
